Nathan's Chuck Wagon Diet Bars
Nathan came up with this recipe because he wanted a yummy fibrous cookie or bar. It is not all too bad... Sharon told me I needed to post it for you. So I have posted his version and my version of the recipe. Hope you enjoy!
2 1/2 c Rolled Oats
2 c Whole Wheat Flour
1 tsp Baking Soda
1 tsp Cinnamon
1/4 tsp Salt
1 c Raisins
1/2 c Cranraisins
1/2 c Walnuts
1/2 c Sliced Almonds
1/2 c Coconut
4 lrg Eggs
1 1/2 c Applesauce
2 TBS Milk
1 tsp Vanilla Extract
Mix the entire bunch in one gargantuan bowl. Grease the bottom of some pans. Fill about 1/2 inch thick and bake at 350 for 20 min. or until brown.
Cindy's variation =

1 3/4 c Fresh Blueberries
1/2 c Cranraisins (or Rasberries)
1/2 c Pecans
1/2 c Sliced Almonds
1/2 c Coconut
4 lrg Eggs
1 1/2 c Applesauce
2 TBS Milk
2 TBS Vanilla Extract
